Marinated Sicilian Olives Made By “The Byron Bay Olive Company”
This is another one of our favourites. While there are a lot of different green olives variety, we chose Sicilians olives. They perfectly compliment this dressing.
The olives are combined with preserved lemon, rosemary and thyme. It allowed them to create a fresh mix of flavours with this meaty texture.
We select the best locally grown lemons and make our own preserved Lemon to give these olives their distinctive flavour.
You will enjoy it as olive table but not only. It will be the perfect agreement for yours :
- snacks or appetizer
- cheese or antipasti platters…
- baked fish or meats
Following traditional family process we reduce to the maximum the salty or bitter taste.
Most of the time olives are process with vinegar. We don’t want vinegar !
So we apply a natural treatment to rinse our olives before marinade them. It will deliver you a nice and smooth flavor that you could not find in a classic olive table.
Our Marinated Sicilians olives will goes beautifully with a strong goat cheese and white or rosé wine for example.

The Sicilian olive is a type of olive which is used in the Sicilian cuisine and regional dishes of Italy
These Olive are bright green, they’re often referred to as dolce (sweet), and come from Castelvetrano, Sicily, from the olive variety nocerella del belice. They have a Kermit-green hue, meaty, buttery flesh, and a mild nutty flavor.
They are an excellent source of iron, fibre, calcium, and vitamin A.
